White Chocolate and Berry Cheesecake
We all deserve a treat from time to time, and there’s nothing more indulgent than cheesecake. The perfect naughty but nice dessert, this white chocolate and berry creation is one of our favourites to serve at the end of a dinner party.
Picture this: it’s a balmy summer evening, and your guests are cooling off on the terrace. There’s soft jazz in the background, a tinkle of glasses and laughter in the air. Out come a beautiful final course - a delight for the tastebuds and the eyes!

20 mins preparation time
6-12 hours chilling (preferably overnight)
Serves 8-10 people
Ingredients
300g white chocolate
600g cream or soft cheese
1 pot of double cream
50g caster sugar
85g small amaretti or almond biscuits
2 tablespoons of jam (berry flavour of your choice)
Few handfuls of raspberries, strawberries and blueberries
Method
STEP 1
Melt the chocolate in a large bowl and set aside
Top tip: You can place a glass bowl with the chocolate in it over a pan of hot water and stir to help with the melting
STEP 2
In a separate bowl, whisk the cheese, cream and sugar together until smooth. Once the chocolate has cooled slightly, fold this into the mixture
STEP 3
Line a cake tin with cling film and add half of the mixture. Stir a handful of your berries with the jam, and spread it on top. Then add the second half of the cream cheese mixture.
STEP 4
Press the biscuits into the top of the mixture, cover and leave to chill preferably overnight.
Top tip: Plug any gaps by crushing some additional biscuits and placing the broken pieces in between
STEP 5
When you’re ready to serve, carefully flip the cake tin over on a plate and remove the cling film. Use the rest of the berries as garnish, and grate some white chocolate over the top.
