Watermelon and Feta Salad
It’s a blistering day and you’re sitting under a shady spot in the garden with a soft, swaying breeze, tucking into something delicious. Salty yet sweet, filling and fresh, we love a watermelon and feta salad to cool off on those hot summer afternoons. The perfect light lunch, or even as a side salad for BBQs and garden parties, this dish proves its versatility, as well as its mouthwatering taste. Serves 2
Ingredients
1 medium-sized watermelon
1 small cucumber
Handful of mint leaves
100g feta
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Method
STEP 1
Cut and cube the watermelon and cucumber and tip into a bowl
STEP 2
Tear the mint leaves and crumble the feta into the bowl. Add salt and pepper to taste and slightly toss.
STEP 3
When ready to serve, drizzle the olive oil and balsamic vinegar over the top, and garish with a few whole mint leaves
