Classic Mojito
The saying goes: you can’t go wrong with a classic. That couldn’t be more accurate when it comes to a mojito. The ultimate summer refresher, there’s no substitute for this traditional Cuban cocktail. Cooling mint, zesty lime and heady rum, all generously caressing crushed ice, makes the perfect combination to cool off against the summer sun.

Serves 1-2
Ingredients
2 teaspoons of fine or granulated sugar
Handful of fresh mint leaves
Soda water (to taste)
60ml white rum
1 medium-sized lime
Crushed or cubed ice
Method
STEP 1
Juice the lime, and muddle it together with the sugar and mint leaves in a jug or cocktail shaker. Top tip: Save one sprig of mint to garnish later, but be sure to crush the rest of the leaves as much as possible to release all the flavour.
STEP 2
In a separate serving glass, add the rum and ice, then pour in the lime, sugar and mint mix, using a spoon to stir it all together.
STEP 3
Top up the glass with soda water and any additional ice, to taste.
STEP 4
Garnish with mint, sit back and enjoy!
